My Quick, Easy, and Healthy-ish Breakfast Idea
Today, I wanted to talk to you guys about my quick, easy, and healthy-ish breakfast idea. I don’t know about you, but I have to eat breakfast! If not, I’m STARVING and I can’t get anything productive done because all I can think about is lunch. However, if you work in an office like me, breakfast can be challenging. I always look forward to work from home days when I make myself fried eggs (in olive oil) and avocado toast. But since I’m NOT a morning person, most workdays, I can’t get up early enough to make breakfast at home and eat before it’s time to leave for work.
I try to do some breakfast meal prep, so I can take it to work to eat at my desk. Some of the things I’ve brought are hard boiled eggs and a banana, chia seeds (with milk and berries), and English muffins with turkey sausage and cheese. But I usually get tired of what I’ve prepped by the end of the week.
So I’ve added another option to the rotation…
PIZZA! Yes, that’s right! Everyone’s eaten leftover takeout pizza for breakfast right? But in an effort to be healthier, I get frozen, organic pizzas from Whole Foods or Trader Joe’s. They have some really good options, including pizzas with cauliflower crust, and toppings such as kale, goat cheese, and caramelized onions. I’ve been loving Trader Joe’s organic roasted vegetable pizza (not sponsored) which is pictured here.
I just throw the pizza in the oven at home, and put slices in baggies or containers when the cool to leave in the fridge. They hold up really well! For breakfast, I’ll either have two slices alone…or one slice and a piece of fruit or a green juice. Or one slice topped with a runny egg (if I have time). Pizza is also super portable to bring to work (no spills or leaks, and doesn’t take up much space in the communal fridge). I’ll microwave it at the office and top with red pepper flakes (or maybe some olive oil) that I keep at my desk. Yum!
Another idea…
I think the key is to not limit yourself to traditional breakfast options (I for one, am really sick of oatmeal). While I might not be able to stomach a steak first thing in the morning, or other lunch or dinner foods, most snack foods still sound good. Another option – I’ll have cheese and crackers with fruit for breakfast! I keep Blue Diamond Nut Thins at my desk, and I’ll bring a piece of brie, gouda, cheddar, or whatever I’m feeling, and either berries or a plum/apricot. And a cup of tea!
